My Go To Green Smoothie




Whenever I want a green smoothie that is refreshing, this is my go to.

I use a lot of Costco ingredients since that is my primary place for groceries.

Servings: 2

Ingredients:
  • 2 cups of Earthbound Farms Deep Green Blends Power (or any combination of Kale, Spinach, and baby greens.  Just watch out for putting in too much Kale as it may given the smoothie a slightly more bitter taste).
  • 1 cup of frozen pineapple, mango, or a combination
  • 1 tbsp of ginger (adjust to taste)
  • 1/2 Fuji Apple cut into into small pieces
  • 1/2 lime pealed
  • 1 cup of crushed ice
  • 1 tbsp of Agave syrup
Directions:
  • Combine all ingredients into a blender and blend until smooth.

Peppermint Bark

I made this to give out to work for the holidays. The vice president's wife told me that it was the best homemade peppermint bark she ever had! So funny since it's only 3 ingredients. Super simple to make, I plan to do it every holiday to give out.

Ingredients
  • 2 lbs high quality white chocolate, like Lindt’s (do not use chocolate chips)
  • 1 cup of crushed candy canes
  • 2 tablespoons peppermint extract

Directions
  1. Place candy canes in a plastic bag and hammer into ¼-inch chunks or smaller.
  2. Melt the chocolate in a double boiler.
  3. Combine candy cane chunks with white chocolate (add peppermint extract at this point).
  4. Pour mixture onto a cookie sheet lined with parchment or wax paper and let it set.

NOTE: Instead of white chocolate, you can use vanilla CandiQuik or Almond Bark (found only at Wal-mart in CA). Then you can skip the double boiler and follow the package instructions to melt it all in the oven. So much easier and just as delicious!

Honey Whip

I made this up to replicate Souplantation's Honey Whipped butter. It came out perfectly and really complimented my zucchini bread:

Ingredients:
  • butter, room temperature
  • honey
Directions:
  1. Whip up butter on medium speed until soft and fluffy
  2. Turn the mixer to low and pour a even stream of honey into the mixer and count to 26.
  3. Scrape the bowl down and whip for 1-2 minutes.
  4. Serve on your favorite muffin or bread!
On top of warm zucchini bread.

Perfect Red-Dyed Egg


After some trial and error, I finally got a dye mixture that produced a nice deep red egg. There eggs are beautiful for red egg and ginger parties.


INGREDIENTS
  • 8 eggs
  • 1 fl oz liquid red dye
  • 8 cups cold water
  • 1/8 cup + 1 tblspn white vinegar
  • 1 teaspoon Kosher salt
  • Olive oil for polishing

DIRECTIONS:
  1. In a stainless steel pot, add water, dye, vinegar, salt, and eggs.
  2. Bring liquid to boil.
  3. Once the liquid is in full boil, turn off fire and remove from heat.
  4. Cover the pot and let sit for 15 minutes.
  5. Remove eggs from liquid and let cool on wiring rack.
  6. Once eggs are cool, polish them with olive oil by using a paper towel.
